Fried with vegetables

Since we still have a lot of vegetables, we offer you a delicious second course, the fried vegetables. It is a kind of omelette but with the addition of many tasty vegetables! Great recipe for picnic, perhaps served in a sandwich. Plus it's a good idea for breakfast in the office.

To make the sausage more appetizing, we advise you to choose organic eggs. How to recognize them?
The eggs have a label, an identification code that provides us with very precise information on their production and origin. At the time of purchase, make sure that the label shows the zero which indicates: hens raised outdoors extensively and with feed biological. Only eggs in the latter category can legitimately be labeled as organic! Here's how to prepare this yummy recipe.

Fried with vegetables. The ingredients for 6 people

  • 6 organic eggs
  • 1 eggplant
  • 2 courgettes
  • 1 potato
  • 1 red pepper
  • 2 carrots
  • 25 grams of raisins
  • 4 tablespoons of oil
  • 50 g grated parmesan
  • salt

Fried with vegetables. The preparation
Cut the eggplant and pepper into thin slices and cook them in a pan with oil for about 5 minutes. Then add the courgettes, the sliced ​​carrots and the diced potato, leaving it to cook for another 15 minutes.

Be careful, cook over medium heat with a lid, and turn occasionally to prevent the vegetables from burning. Add the raisins to the vegetables and then add the eggs, previously beaten with cheese and salt. Cook the omelette on both sides and serve. If you want to make the omelette lighter you can bake it in the oven.
