L'pasta salad it is an excellent single dish that offers us many solutions: it is a nutritious first course, easy to prepare and in the same way it also replaces the second. Today we recommend one recipe that combines vegetables with the pleasure of pasta. Rich in taste but light.
Pasta salad recipe. The ingredients for 6 people
- 500 gr. of durum wheat pasta (butterflies recommended)
- 1 foot of green salad
- 1 green salad tomato
- 1 yellow pepper
- 1 large carrot
- 1 stick of celery
- 2 tablespoons of capers
- 2 tablespoons raisins
- 1 red onion
- 1 mixed bunch of basil and parsley
- Salt to taste.
- extra virgin olive oil
- balsamic vinegar
- 1 green apple
Pasta salad recipe. The preparation
Wash all the vegetables well and cut them into small cubes. Slice the onion. Cut the salad small.
Cook the pasta in salted water and cool it under running water. Drain well, add 2 tablespoons of oil and mix.
Add all the vegetables cut into small pieces, the capers, the chopped parsley and the basil chopped by hand.
Salt and season with oil and 2 tablespoons of balsamic vinegar.
Place it in an airtight container and refrigerate.
Wait at least twelve hours before serving. Add the apple cut into small pieces just before serving.
