Cabbage based recipe: Red cabbage soup. Ingredients (portion for 4 people).
A glass of white wine
1 red cabbage
100grams of carrots
30 grams of salted butter
olive oil salt and pepper to taste
Cut two apples into cubes. In a high pan, heat the oil and sauté the diced carrots together with the sliced onion. Add after 5 minutes the red cabbage thinly sliced and diced apples. Season with salt and pepper, add the wine and cook over high heat. Stir from time to time. Add water to cover the remaining ingredients and cook for 15 minutes over medium heat. To conclude the recipe pass the soup to the mixer in order to obtain a delicate cream. Arrange on a plate and decorate as desired with a few leftover red cabbage leaves and a few sprigs of parsley.
Broccoli recipe. Penne au gratin with cauliflower and broccoli. Ingredients (portion for 4 people).
300 grams of pens
250 grams of cauliflower
125 grams of broccoli
75 grams of grated cheese
1 package of bechamel
2 tablespoons of breadcrumbs
Garlic Salt and pepper
Cook the pasta as usual and, in the meantime, preheat the oven to 150 degrees. In a pan, sauté some garlic and cook the cauliflower and broccoli, adding a little water if necessary. Season with salt and pepper during cooking. Once softened, mash the vegetables with a fork and cook for 10 minutes.
Once the pasta is cooked, pour it into the pan with the cream of broccoli and cauliflower and mix for 5 minutes on low heat. Pour everything into a greased pan and add the béchamel. Mix well. Sprinkle with grated cheese and a little breadcrumbs. Bake until you get a golden crust on the top.
Cauliflower recipe. Cauliflower and broccoli flan. Ingredients (portion for 4 people).
600 gr of broccoli
250 gr of cauliflower already boiled
100 of melted cheese in cubes
Put the boiled vegetables in the blender and blend them coarsely, without reducing them to a puree. Season with salt and pepper and mix well. Add to pureed vegetables nutmeg, diced cheese and gently mix the mixture. Finally add the beaten eggs and the bechamel. Pour the mixture into a greased pan with the knob of butter and floured with the breadcrumbs. Place the pan in the oven at 180 degrees for 30 minutes. The surface of the flan must be golden brown. Once cooked, turn off the oven and leave it inside for about ten minutes so as to finish cooking without waste energy.
